Hand selected Prime Quality Australian Wagyu Beef is trimmed to a strict specification. Salted and carefully spiced, left to cure for a few days, then Air dried for up to three months. The result is Air Dried Wagyu with a marble score 7 to 9 that when sliced thinly just simply melts in the mouth with a heavenly flavour.
