Coppa (Capocollo) is a slow cured and matured product manufactured using the pork neck muscle. Our Capocollo is made using only the finest Australian pork neck, carefully seasoned, air-dried and matured to deliver a beautifully marbled, rich and nuanced flavour with a silky texture. Average weight: ~1.3 kg (single unit) or ~4.0 kg (slicing logs). Shelf life: 180 days when stored at 10°C or below in the original unopened vacuum pack.
